LEMON AND LIME CORN SALAD

INGREDIENTS
2 baby cos lettuces, shredded
80g corn kernels
1 avocado, diced
1/2 can red kidney beans, rinsed
1/2 red onion, thinly sliced
10g fresh coriander

LEMON/LIME DRESSING
2 tbsp olive oil
1 tbsp lime juice
2 tbsp lemon juice
4 drops of tabasco sauce
1/4 tsp ground cumin
Salt and black pepper

TO SERVE
45g tortilla or corn chips

DIRECTIONS
Combine the dressing ingredients in a jar and shake until blended.

Combine all the salad ingredients.

Shake the dressing again just before pouring over salad.

Divide the salad into 4 bowls.

Scatter the chips over each serve.
