TRIM MANGO FROZEN MARGARITA

(gluten free, dairy free, nut free, vegan)

serves 4

 

Ingredients

  • 60ml Trim Mango
  • 500g frozen mango
  • 120ml (½ US cup) lime juice
  • 120ml (½ US cup) triple sec*
  • 120ml (½ US cup) tequila*
  • 120ml (½ US cup) agave syrup
  • Lime wedges to garnish

 

for chilli salt

  • 100g (½ US cup) sea salt
  • 1 tsp dried chilli flakes
  • ½ tsp paprika powder

 

Step 1. Place 4 coupe glasses into the freezer for at least 30 minutes before serving.

Step 2. Roughly crush the chilli salt ingredients in a mortar and pestle and place onto a small plate.

Step 3. Rim the glasses with lime juice and place the glass rims in the salt to coat.

Step 4. Place the margarita mix into a blender jug and blitz until smooth.  Serve immediately garnished with a lime wedge.

* For a mocktail, substitute the alcohol for 240ml (1 US cup) of orange juice.

 

TRIM MANGO OVERNIGHT OATS

(high protein, dairy free, nut free, vegan)

serves 2

 

Ingredients

  • 2 tbsp Trim Mango
  • 250g frozen mango
  • 90g (1 US cup) rolled oats
  • 2 tbsp chia seeds
  • 160ml (⅔ US cup) oat milk

 

to garnish

  • extra oat milk, optional
  • 1 passionfruit
  • 2 tbsp pumkin seeds (or other seeds of your choice!)
  • 2 tbsp toasted coconut flakes
  • 2 tbsp goji berries (or other dried berries of your choice!)

 

Step 1. Defrost the mango before blitzing it to a puree in a blender.

Step 2. Place in a bowl with the Trim Mango, oats, chia and milk, mix to combine, cover and refrigerate overnight.

Step 3. To serve, place oats in a bowl, drizzle with extra milk, if using, and top with passionfruit pulp, seeds, coconut flakes and dried berries.
