TRIM COCONUT LIME CHICKEN CURRY NOODLE SOUP
(high protein, gluten free, dairy free)
serves 4
Ingredients
- 60ml Trim Coconut Lime
- 1 steamed skinless chicken breast, shredded
- 1 tbsp coconut oil
- 1 tbsp red curry paste
- 1l chicken stock
- 270ml light coconut milk
- 12 cherry tomato, halved
- 200g green beans, trimmed
- 200g rice noodles
for garnish
- Coriander leaves
- Thinly sliced spring onion
- Toasted peanuts
- 2 limes, halved
Method
Step 1. Heat a medium saucepan over med/ high heat.
Step 2. Add oil and curry paste and fry until fragrant.
Step 3. Add stock, coconut milk and tomatoes, and bring to a boil, lower heat and simmer for 10 minutes.
Step 4. Add beans and simmer for a further 5 minutes.
Step 5. Add Trim and shredded chicken and simmer to warm through. Meanwhile, cook noodles according to the packet instructions.
Step 6. Divide noodles between 4 bowls and ladle over the soup.
Step 7. Add garnish to serve.
TRIM COCONUT LIME CHEESECAKE BLISS BALLS
(high protein, gluten free, dairy free, vegan)
serves 12
Ingredients
- 180ml Trim Coconut Lime
- 100g (1½ US cups) shredded coconut
- 225g (1½ US cups) cashews
- 250g light cream cheese
- zest from 2 limes
- 4 tbsp honey
- 4 tsp vanilla extract
Method
Step 1. Place a third of the coconut and zest from one lime onto a plate.
Step 2. Place the cashews into a food processor bowl and blend until a fine meal forms.
Step 3. Add remaining ingredients and pulse until well combined.
Step 4. Place the mixed ingredients into the refrigerator for half an hour to firm up.
Step 5. Roll into 12 equal-sized balls, coating them in the coconut and lime mix before storing them in the refrigerator.
