1 ripe avocado, pitted
1 tsp lemon juice
2 slices wholemeal bread, toasted
125g halloumi, sliced thinly
1 tbsp olive oil
Slice the halloumi into thin slices. Pan-fry them until golden brown on both sides.
In a small bowl, mash avocado with lemon juice and season with salt if desired. Divide the mixture between the bread. Carefully arrange slices of halloumi, garnish with herbs, red onion and seeds as desired.
